Zoll Cellars Winery

Zoll Cellars is located in the home of Frank and Meghan Zoll, in beautiful Shrewsbury, Massachusetts. They use their half acre of property as a private winery that offers wine enthusiasts the unique experience to learn hands on how to make exceptional wine at harvest. The Zolls have created a beautiful winery, where the birds sing from the trees and chicken roam free. They use the biodynamic branch of organic farming. This type of farming is one step beyond organic. Not only do they not use harmful chemicals, but they harness the energies of the planets and constellations, as well as the energies from the elements: earth, wind, and water. Zoll Cellars shows you how to take fruit from the field, to the table, by offering private wine making sessions, which are great for corporate or team building events. They also show off Frank’s Chef Pastry skills by offering wine and dessert pairings. Harvest Crush Classes 99 each
Join us at the winery for our harvest to sample local New England wines and crush the grapes of Zoll Cellars future vintages. Think like a winemaker as we process the grapes prior to fermentation. Pastry Chef and Vintner, Frank Zoll, will share with you how he hand crafts his wines. Chilean Cabernet Franc will come in by boat about the second week of May 2012. Wine making Harvest Crush Classes start with a New England wine tasting paired with savory artesian breads & farm fresh local cheeses This will be followed by a Zoll Cellars biodynamic farm tour. Then it will be up to you to start with the sorting of grapes, crushing and de-steming of fruit. After our grapes are crushed, we will analyze and test the juice to make simple corrections to balance the must prior to fermentation. Tentative Harvest Date May 19th 2012. Harvest dates subject to change based on weather conditions that effect ripening of fruit.

Sparkling Strawberry Frizzante 17.99 / bottle
In making Strawberry Frizzante we take the ripest strawberries to make a dry pink champagne style of wine. After it is produced this wine recieves a secondary fermentation in the bottle where it becomes lightly effervesent. This wine is unfiltered & aged on the yeast to allow the flavors to evolve over time. This should be drank like any white wine, chilled and served with fruit, goat cheese, or dessert.
